Winter squash is known in general for being very high in: Vitamin A, Vitamin K, Vitamin C and folate. It prefers well draining but very rich soil, enriched with compost with full sun exposure. Plant about 1 inch deep after the threat of last frost. They can be started indoors and carefully transplanted outside 3-4 weeks after the last threat of frost. The bigger the vine before growth, the bigger the fruits at the end of the season. Squash is heat loving and does not tolerate frost well. Squash needs lots of water but be careful to avoid the leaves as excess water on the leaves can cause powdery mildew. Summer squash plants are large and bushy. Be on the lookout for squash borers as they cause certain death with plants. To prevent them, amend the soil and sprinkle the plant with diatomaceous earth. Harvest fruits at the end of the season, according to the specific variety.
