Arugula is a spicy green best served in salads. Start seeds outside directly in the soil as soon as the ground can be worked, or start indoors and transplant. Then do repeated plantings every 3-4 weeks. Use pine needles or dry grass as mulch and keep the soil continuously moist. Plant seeds ¼ inch deep and 1 inch apart to start and thin to about 4-6 inches apart. To stimulate growth, use some sort of well rounded organic fertilizer. Plant in sunny locations and trim off larger leaves as they become big enough to eat. The heat of summer will cause it to go to flower and seed. Either kill the plant and replace at this point or allow to go to flower so you can harvest seeds.
