Parsnips are the sweeter, larger cousin to carrots that are insanely easy to grow. They like full sun during the growing season. For the soil, make sure you have about 12-15 inches of rock free, rich well draining soil for them to grow. Plant them about ½ inch deep and keep the ground moist until they sprout, it takes about 2-3 weeks. Don’t bother transplanting parsnip, just directly sow as soon as the ground can be worked. It takes about 16 weeks for the roots to fully develop so start as early as possible. For the sweetest roots allow them to experience a hard frost. Then cover with mulch and wait until the ground thaws in the spring to harvest. This will leave you with the largest sweetest parsnips.
