Viroflay is an heirloom variety that grows up to 24″ in diameter. The crisp smooth dark green leaves are ready to harvest in 21 days for baby greens or 45 days for full size leaves. Remember keep them cool, they don’t mind some shade.

Spinach is a super cold hardy crop that anyone can grow. It’s also extremely rich in Iron, Calcium, Vitamin A, Vitamin B and Vitamin C. It does best in nitrogen rich well drained soil. Plant seeds directly as seedlings do not do well with transplanting. Plant ½ to 1 inch deep as soon as the ground can be worked. Plant about 3-4 inches apart and water regularly through the growing season for best results. Spinach is not at all heat tolerant and is best grown during the cool part of the season. Full sun is fine in cooler climates, but some shade in the afternoon, especially in warmer areas will keep it from bolting a bit longer. Spinach grown in the summer will bolt and flower making it bitter. Harvest as soon as the leaves reach desired size. For baby spinach, just pick baby leaves. Spinach is great for microgreens!
