Collard greens are another cool weather crop that is tolerant of spring in warmer areas. A bit of a light frost at the end of the life can make for sweeter leaves. Best directly sown but can be planted indoors 3 to 4 weeks before the last frost date and transplanted when 2 inches tall. Best in full sun or partial shade. Plant seeds ¼ to ½ inches deep and space plants about 18-24 inches apart. Seeds take between 10-21 days to germinate. Keep well watered for best results. Harvest whole plants or just outer leaves to extend the growing season. This plant takes about 45 days from germination to reach maturity so is a good quick crop. Harvest whole plants when they are about are 6-8 inches tall.
