Carrots are the perfect solution for those short on space. For example, they can be grown very well in a milk crate filled with rock free soil or anything at least 12 inches deep. You want deep soil, free of rocks to avoid deformed carrots. You can fit about 18 in a square foot, spaced about 2 inches apart. Carrots do well in full sun with cool soil, so mulching helps a lot to keep it cool. Container gardens are nice because you can move it if the soil gets too hot. Carrot seeds are tiny so for best results broadcast the seed then cover with about a third of an inch of soil. It takes about 14 days for seeds to sprout so keep the soil moist that whole time. Thin to 2 inch spacing when they have their first true leaves. The best carrots grow with consistent watering. Carrots should be ready about 60-80 days after the seeds sprout. The tops should be popping out of the soil a little bit. Harvest just by pulling out of the soil and clean off to store in a root cellar.
