This is the improved version of the Chioggia beet. It has better skin color, candy striping, and is tolerant of bolting. Ideal for boiling, pickling, baking, and freezing. Leaves can be used as greens. This is a new strain of the popular Italian heirloom that was improved for better uniformity and bolt tolerance. An excellent choice for home gardens. Beta vulgaris.

Beets are water loving root vegetables that come in all sorts of different shapes and varieties.  Direct sow outside ½ inch deep and 2-3 inches apart. Thin to about 3-5 inches apart. You can start indoors, and then transplant them outside 3-4 weeks after the average last threat of frost. They can be planted in partial shade but prefer full sun. They should be ready 7-8 weeks after germination.  The tops can be eaten as well as the roots to make this an incredibly versatile garden veggies. Keep the soil well irrigated to avoid scabs or other blemishes within the beets.  Irregular watering will cause weird issues with the way the beets grow. Wash and store without the tops for up to 6 months.
