Leeks are cold hardy and easy to grow sweet alternatives to regular onions. Plant seeds in a tray 10-12 weeks before last frost about an inch apart in a tray with compost. Cover with a light layer of soil and keep consistently moist. As the plants grow, trim the green tops to keep the energy focused on growing a strong root system and bulbs. They prefer full sun, well draining but consistently moist soil. To help increase the amount of stalk, some add soil around the onion in a mound as it grows to help encourage it to grow larger. They can be harvested at any time but its best if you allow to grow with regular “haircuts” until the tops are yellowing and the plant starts to fall over. Space these 6 inches apart when you transplant outside.
